Last night, I had the privilege of celebrating the launch of the Made With Love cookbook by Kelly Childs and Erinn Weatherbie, co-owners of Kelly’s Bake Shoppe and Lettuce Love Café right here in Burlington. This red carpet event brought together vegans and non-vegans alike for a fantastic night of food, fun and celebrations! I am truly grateful that Kelly & Erinn chose to build their businesses right here in Burlington, Ontario.
Gratitude Tip: What are you celebrating in your life right now? Have you been taking the time to celebrate both small and big milestones? We tend to save our celebrations for big events and goals achieved, but there is always something to celebrate every day! The gift of another day, here on earth, to make a difference is worth raising a (green juice) toast to every morning.
During this year’s 30 Day Whole Body Detox, I finally let go of eggs. I decided to see what I would miss in my meals if I just simply let them go. Nothing really changed and I still love to cook and eat, so now I officially eat as a vegan. For the first time when I was out at a wedding on the weekend, I asked for a vegan, gluten-free meal (I had originally given my preferences as vegetarian) and I ended up with a fantastic meal. And I want to thank both Kelly and Erinn for their influence on the way that I choose to eat and how much more aware I have become about the wonderful benefits of a plant-based diet. And with their amazing new cookbook, there are no excuses.
The evening was a red carpet affair, complete with delicious vegan & gluten-free goodies prepared by Chef Doug McNish. Many of the amuse-bouche type foods were from the cookbook and the best part was that I didn’t have to ask any questions about the food – I could simply eat everything that came out of the kitchen! What a treat!! I even celebrated with a few sips of pink bubbly but that was all I could handle. Kelly and Erinn were both radiating with such joy and gratitude throughout the evening. When they did a short speech, you could feel the complete love and feeling of truly being humbled by the success of the Made With Love cookbook in a few short weeks. It has already landed on the Canadian Bestseller lists in the Globe and Mail and Toronto Star in under 3 weeks of being on the shelves! This is only the beginning for these two incredible entrepreneurs, who have taught millions around the globe that vegan & gluten-free does not mean no taste and no nutrition. Especially when it comes to baking.
I have only made one recipe so far, but I love it so much that I want to make it again. The sweet potato quinoa burgers are out of this world. I mean they are from a different universe they are so delicious. I would suggest getting the book just for that!! It’s on sale at Costco and both Kelly & Erinn will be doing a signing on Sunday May 1st at the Burlington location. You can order the Made with Love cookbook here.
