Only 10 days to go, not that I’m counting down or anything. This week has been very sparse for actual cooking around here, especially since I have been out for dinner twice! So, I wasn’t really up for cooking tonight.  Luckily, I found a great shortcut.  I made a great homemade chili earlier in the 28 Day Total Body Detox and it was great – plus lots of leftovers. The next day, I enjoyed it on a sweet potato.  Since I was short on homemade, I chose the next best thing – Amy’s Vegetarian Chili (their cans are BPA free!!).  Take a look at their website – I am super impressed. I warmed the chili on the stovetop and cooked a sweet potato in the microwave (no, I didn’t stand in front of it!). I split the potato in half, for me and my hubby.  Put some Daiya dairy-free cheese on mine and covered it with chili. It was great!!

On a person note, while things have been really great on the 28 Day Total Body Detox (if you want to catch up, click here for Day 1), yesterday was a challenge for me.  I had my first asthma attack in 3 years.  Luckily I still had my expired inhaler (which worked) and I was able to get it under control. What was most interesting – I have no idea what triggered it!! And after I took the inhaler (which I am grateful for but I hate the side effects) the first thing I thought about was my liver!!! lol!! I thought about how my liver would have to process the medication. One of the side effects of the meds and so much coughing is that I have lost my voice today.  In the past, I probably would have just pushed on and worked through it.  Since one of the components of the detox is taking care of ME for 28 days – I took most of the day off.  Granted, I am my own boss, but sometimes it’s hard to just stay off the phone and the computer during a work day.

I was quiet all morning, didn’t speak to anyone and took care of things around the house. I relaxed a bit, watched some tv (Survivor – really?) and ate healthy snacks. I did visit the LCBO (our liquor store) today for moving boxes and I may have purchased some of my favorite Red Diamond wine since it was on sale (for AFTER the detox). Sale ends April 29th!

All in all, I do feel much better today, I just sound very husky (or sexy?).  Another good night’s sleep is in order.

What’s your back-up plan when you don’t feel like cooking? Do you have a go to meal that’s easy to prepare with what you have in the house?
