Already almost done the first week! It goes by so quickly. I am really enjoying the new recipes this year for the program. What I have realized is that many of my cravings are actually the result of habits. It’s been a habit to eat a piece (or 2,3,4) of chocolate after lunch. It’s a habit to have a drink while watching a movie with my hubby. It’s a habit to snack on Eggies at my desk. Once I removed the items from my home, it’s not as easy to fall into the habit and I make better choices. I am super happy with my third year so far doing this program. I promise you, it’s not as hard as you think.

A visit to Costco today to get an extra-large jar of Mara Natha Almond Butter, this stuff is awesome. I also found a copy of Walking With Dinosaurs, but that’s a topic for another blog post (p.s. you’ve got to see this movie!!).

Tasty leftovers!

I made a leftover meal for lunch with items I had stored in my fridge from the weekend. The inside of a collard taco (basically beans, peppers, onions and rice) topped with roasted sweet potatoes. I’m not a fan of the microwave (again, another topic for discussion) so I reheated everything in a frying pan with some coconut oil. Topped it with organic salsa and a few slices of avocado and it was delicious!

For dinner, I attempted to make the Kale, Pear and Quinoa salad recipe provided by Kelly Childs, owner of Kelly’s Bake Shoppe and Lettuce Love Café. I did end up making a few adjustments, using black organic kale instead of dinosaur kale, and only using half of the cooked quinoa, but it was AMAZING. The dressing was so surprisingly good, I had no idea it would work so well. That’s what I love about new recipes, you sometimes try thing you never think would work, and they do! We had lots of leftovers and I think it will still be ok for lunch tomorrow.
