Today was great day! Beautiful weather, although very high winds at times. It’s a wonderful time of year. I took the time to stop down by the lake (Ontario) for a bit of a mind break and meditation this afternoon. I remember that one of the purposes of this program is to spend some time taking care of myself, so I figured this was a great way to enjoy some me time!

There are many great recipes in the 28 Day Total Body Detox, but tonight I made one of my favorites and I thought I’d share with you!

Julie’s Simple Quinoa Salad

Prepare 1 cup of quinoa – My favorite is TruRoots Organic. I use 1 cup of purified water and 1 cup of low-sodium vegetable broth. Bring to a boil and simmer for 12 minutes.  Let stand for 5 min, fluff with a fork and transfer to a large bowl to cool (takes about 30-60 min to cool).

Meanwhile, prepare the following: Approx. 1/2 pint grape tomatoes, cut in half. Approx 1/2 bunch of green onions, finely chopped. A few handfuls of cilantro (coriander), finely chopped. Approx 1/4 goat feta (dairy product) crumbled.  Once the quinoa has cooled, add above ingredients.  Can be eaten alone, with a balsamic vinaigrette or as a meal.  I like to prepare with argula, avocados and leftover salmon. This can be dairy free if you remove the goat feta of course. Personally, I find that a small amount of goat dairy in my diet is ok. Leftovers can be stored in glass containers (see photo) and eaten throughout the week.
