Simple, Tasty, Gluten-Free Salad
Turns out that I have completely embraced a gluten-free lifestyle since completing the 28 Day Total Body Detox. About 15% of the population has a true gluten intolerance, which is a large percentage of people, and I’m fairly certain I fall into this category. Interestingly, I’ve cut dairy out of my diet before (did for 2 years) and noticed few changes. 28 Day without gluten and the changes were drastic – so I am continuing to avoid gluten.
Here is a very yummy salad I love for the summer.
It’s a simple recipe:
- 2 Handfuls of organic argula (my favorite green) & mixed baby greens
- Leftover BBQ salmon
- 2-3 organic strawberries, sliced
- 4-5 organic grape tomatoes, halved
- Crumbled goat’s feta
- 1/2 cup cooked quinoa
- Better Than Bottled Balsamic Vinaigrette from Oh She Glows.
