As many of you know, I have a favorite wrap that I eat for lunch almost every day.   To my surprise, tonight, I discovered a new (2nd favorite) wrap for dinner. Inspired by my friend Sonya, it’s a new way to enjoy tuna! Note, my daughter wanted to help me with the photo, hence the little hands! And yes, it tastes a lot better than it looks.

First prep your tuna:

Using a fork, combine all ingredients in a bowl.

Next combine the following on a (gluten-free) wrap:

  • hummus
  • mixed greens or spinach
  • tuna
  • dijon mustard
  • goat cheese

Wrap and enjoy!! I promise this is so tasty. The yield is enough tuna for 2 wraps (you can save half in the fridge).  This combo may make the rotation once a week. Maybe. What’s your favorite creative way to use tuna?
